I don't expect them to know about infectious diseases, but basics, like washing after touching anything contaminated should be a no-brainer. As for your prior licking employee, I can guarantee that as a food blogger, had I seen that, it wouldn't matter how good the food was. As an assistant manager at a store in the Sonic chain many years ago, I once watched one of my cooks dress a bun and get a little mustard on his hand, which he then <i>licked off</i>. I threw away whatever buns he had dressed, told him to wash thoroughly, wipe the station down with a sanitary rag, and if I EVER caught him licking his hand again, he'd be out the door.<br /><br />He didn't even understand what he did wrong. I had to explain it to him, including that the Health Department reports that upwards of 50% of adults have staph bacteria in their saliva.Matt Kufflernoreply@blogger.com
